Kolsvart Swedish Candy Fish & Licorice, 120g

Swedish candy fish from Kolsvart, shaped like actual Swedish fish rather than a cartoon of one. For the elderflower pike they went as far as catching a real pike, scanning it and 3D-printing the mould from it. Each flavour is named for the fish it copies, and part of every bag goes to Sportfiskarna, the Swedish anglers' association, for cleaner water and healthier fish stocks. Since they were making candy fish anyway, they figured they might as well help the real ones.

The flavours:

• Elderflower (Gäddan, pike): the taste of a Swedish summer, light and floral.
• Sour Blueberry (Piggvar, turbot): fresh blueberry rolled in a sweet-sour powder for an extra kick.
• Blackcurrant & Raspberry (Torsken, cod): two classic Swedish berry flavours in one bag.
• Sweet Raspberry (Röding, Arctic char): named for the char because they share the same red. Good alongside the licorice.
• Sour Raspberry (Sur Röding): the same raspberry, rolled in sour sugar.
• Sour Lemon (Strömmingen, Baltic herring): bright, sharp and properly sour.
• Salty Licorice: Kolsvart's classic salty fish, sharp with salmiak. For people who already know they like it.
• Smoked Licorice: salty licorice that has been cold-smoked. As far as Kolsvart knows, it is the only smoked licorice in the world.
• Licorice Ginger: soft sweet licorice with real ginger. Simple, and better than it sounds.

None of them contain gelatin, and most are vegan and gluten-free. The exception to know about is Licorice Ginger, which is made with wheat and rye flour and is not gluten-free. Check each bag for full ingredients and allergens. 120g (4.2 oz) per bag, made in Sweden.

Kolsvart began with a café in Malmö that was loved by its guests and a financial nightmare for its owners. Kolsvart means pitch black in Swedish, and out of that came licorice, then candy, made with the idea that the simple things are always the hardest to do well.
