Laguiole en Aubrac Folding Knife – Handcrafted in France
Un petit trésor de poche. This is the classic Laguiole folding knife from Laguiole en Aubrac, the slim, curved shape that has been carried across the Aubrac plateau since 1829. It has a Sandvik 12C27 stainless steel blade that resists rust and holds a fine edge, with a shepherd's cross and hand-finished spring.
Two sizes, two finishes:
- 12cm Classic: polished stainless bolsters and a polished blade for a bright, shiny finish
- 11cm: matte (satin) stainless bolsters and a satin blade for a soft, understated look
Choose your handle:
- Cow Horn (12cm, polished): natural horn with rich, shifting tones, so every piece is shaded differently
- Ebony Wood (12cm, polished): deep black ébène, smooth and elegant
- Sheep Horn (12cm, polished): pale, luminous horn with soft natural striations
- Cow Bone (11cm, matte): natural bone with soft cream tones that deepen with age
- Juniper Wood (11cm, matte): fragrant French genévrier with a warm honey grain
- Pistachio Wood (11cm, matte): a rich, swirling brown grain with deep, dramatic figuring
Sizes refer to the handle length when closed. Wood, bone and horn are natural materials, so each knife's color and pattern will vary. A gift for the cook, the collector, or anyone who loves France. Joyeux Noël!
L'Histoire de Laguiole
In 1829, in the small mountain village of Laguiole in southern France, local cutlers made a simple folding knife for the farmers and shepherds of the Aubrac plateau. Nearly two centuries later, that humble farmer's knife is one of the most admired pieces of French craftsmanship and a natural fit for our European artisan collection.
What makes a Laguiole special
- Made by one craftsman. A single cutler assembles each knife from start to finish.
- 109 to 166 steps. A one-piece knife takes 109 production steps; two-piece and three-piece models take 166.
- Shaped by hand. Each blade is hardened by hand, and every part is shaped and fitted by hand.
- Hand decorated. The blade and spring are decorated by hand, so no two knives are exactly alike.
- The shepherd's cross. The small cross set into the handle goes back to shepherds who planted their knife in the bread and stopped to pray far from the village church.
- Natural materials. Handles are made of bone, horn, and French and exotic woods, each with its own color and grain. Traditional carbon-steel blades sharpen easily and hold an excellent edge.
